Delecious Mushroom soup - straight from Hongkong





When you find your calling, let nothing let you look back! 

This is what I have learnt from Yung Oi Lung. Our story for today is straight from Hong Kong. Yung, a gemologist by profession, suddenly bumped into chef Lilo and happened to learn cooking and baking for the first time in her life. This started her romance with the art of baking and there was nothing stopping her. She now runs her dessert shop “Cream Trattoria” which is a haven for anyone who has a sweet tooth and yearns for delicious and quality cakes, bakes, puddings and pies.
She shares that she had never cooked before, but, your calling can just hit you some day and you find that there is nothing else you would like to do more! It just completes the person you are – this is what happened to her. 

Nothing makes people more happy then a delicious dessert after a sumptuous meal and she loves to be the one who prepares that happiness for them!! People love it at La Trattoria, Yung style!

It’s not just desserts but multiple cuisines that she specializes in and she shared with us the recipe of her favorite mushroom soup…Here it is:

Mushroom soup
 
Ingredients:
  •        1 tbsp butter
  •        4-5 cloves garlic, finely chopped
  •        1 Onion, sliced
  •        Mixed mushrooms, sliced (1 cup) (if you do not have available, you can use just button mushrooms),
  •       Chicken stock/ vegetable stock (750 ml) 
  •            Salt to taste 
  •             Black pepper to taste (use whole and sprinkle with grinder dispenser) 
  •            Cream (optional) 
  •            Flour (1 1/2 tsp, optional)
  •       Truffle mushroom oil (optional)
  •       coriander/celery (for garnish)

Method:


  • ·         In a pan, heat butter
  • ·         Add garlic and onion and saute until golden brown
  • ·         Add mushroom, let them cook, Add black pepper
  • ·         Add in chicken stock/ vegetable stock
  • ·         Let it boil for a few minutes
  • ·         Let it cool, then blind the mixture and add salt and pepper
  • ·         Now boil the soup a lil more, you can add cream, if you like it creamy
  • ·         Add flour and 1 tsp mushroom oil to enhance thickness and flavor
  • ·         Garnish with coriander/ celery and a few mushrooms
